Nobody can tell you the "perfect" settings. You just have to play around with them until you see "what looks good" to you.
For instance, you may not want the PS3 to upscale the DVD, if your TV's upscaler is better. So in that case you'd put it to Off. Full screen I believe just stretches the picture to widescreen. So in that case I'd select normal or double scale. But again, it's what looks good.
And as far as cinema conversion, again, you'd have to play around with it. Sound options should be default unless you're using a surround sound system, since then you have to set which type of streams your surround sound accepts.
